The woman behind Hija de Sanchez is former Noma chef Rosio Sanchez, a Mexican-American chef from Chicago. She is on a mission to bring authentic Mexican dining experiences to Europe. Hija de Sanchez uses products from Mexico while also finding inspiration and embracing exceptional local products. For instance, they only use heirloom corn imported from Mexico for their tortillas. They obtain the corn from small producers who use traditional agricultural techniques to grow organic and sustainable crops. At Hija de Sanchez they believe in being socially responsible in the way they source and represent the ingredients that come from Mexico.
